Felicity's Fruit Cake

This is our favourite Christmas Cake recipe.

You will need

450g Currants
450g Raisins
450g Sultanas
450g Mixed Fruit
2 cartons Cherries
Juice and grated rind of Half a Lemon
1 carton Mixed Peel
115g Almonds
340g Butter
340g Brown Sugar
450g Flour
6 Eggs
1 teaspoon Baking Powder
4 tablespoons Golden syrup dissolved in a cup of Milk

What to do

  1. Cream butter and sugar, and add the eggs one at a time. Mix in the rest of the ingredients.
  2. Bake slowly (300F or 150C) in greased and papered tin. Increase the height of tin as necessary using cardboard and greased paper. Cooking can be 4 hours plus. Insert a skewer. It will come out clean when the cake is cooked.
  3. Best made in September/October, and allowed to ripen slowly with generous additions of brandy from time to time. Wrap in paper and gladwrap until ready to eat. Can be made and consumed instantly, and is still a fine cake.
